Mushroom Farro w/ Roasted Cauliflower & Caper Lemon Sauce

A super rich vegetarian meal that is full of fiber and all the great micro-nutrients that grains and veggies provide. Can be made vegan if desired by leaving out the cheese. Sauteed chicken would also pair great with this dish if needed to satisfy a meat-eater-at-every-meal’s needs.

While it looks like a long drawn out recipe but it comes together in no time! I highly recommend making a double batch to have for lunches throughout the week.
